    Made this for ZWT 8 the Spainish leg for Diners, Winers n Chives. I enjoyed how fast and easy it is to make and liked the presentation. My only issue is I felt the goat cheese was a little to strong in it for me and think next time I might cut that amount in half and increase the ricotta which I much prefer, maybe even add a little honey to the mixture. But then I'm not a big goat cheese fan, for me a little goes a long way. I think it's a nice, light dessert that most folks will enjoy.

    Toast the Walnuts and Cool. You Can Leave the Walnuts Whole or Chop Coarsely When Cool.

    Mix the Goat Cheese and Ricotta Cheese Together Well With a Whisk.

    Put the Cheese Mixture Into Small Ramekins and Refrigerate at Least 15 Minutes, or You Can Just Mound on a Dessert Plate.

    Unmold the Cheese. Top With 2 Tbsp Walnuts and Drizzle Each With 2 Tbsp Honey.
