2 tablespoons vinegar

1/4 teaspoon pepper
4 cups cubed cooked potatoes (5 to 6 medium)
1 cup sliced celery
1/2 cup chopped onion
2 hard-boiled eggs, chopped

Classic Creamy Potato Salad Recipe

    Of course most of our mothers made the best Potato Salad, and I make mine close to hers, it's close to The Original Potato Salad recipe, she didn't put any vinegar or sugar, but she varied between cutting up dill pickles or using some sweet pickle relish, depending on the Meat served. I on the other hand added in my time, because I migrated East from Texas to Alabama and had access to sweet Vidalia Onions, added some chopped to mine, and a Tablespoon of Yellow Mustard. It's not that Mom didn't love onions, she did, and Dad loved Green onions. But they tended to be strong back in the 60's and I think she had them on the side for visiting family. She did like that tiny jar of pimentos chopped in it, and a small handfull of curly parsley from her herb bed, freshly chopped. I love that too. I'll see if I can add a picture later when mine is done.
