    Outstanding sauce recipe! This recipe shows up on several recipe sites, and is an authentic central Italy sauce. Do NOT neglect the coriander or the cumin, they are "background taste" and if you ever bought pizza from a shop I will guarantee you they were both in the sauce. Also, the sugar does NOT make the sauce sweet--it neutralizes the acid in the tomato. A few hours after making it, the sauce will not be sweet (this trick works to take the acid bite out of spaghetti sauce too). I triple the pepper and garlic .

This recipe shows up on several recipe sites, and is an authentic central Italy sauce. Do NOT neglect the coriander or the cumin, they are “background taste” and if you ever bought pizza from a shop I will guarantee you they were both in the sauce. I triple the pepper and garlic .,This was way too mildly spiced for my tastes. First, mixed everything as listed, except cut brown sugar back to 1 teaspoon as I don’t care for sweet pizza sauce, then started tasting. Adjusted seasoning by upping pepper, coriander, basil, oregano, and cumin to 1 teaspoon each. Added 1 teaspoon fennel seed, 1/2 teaspoon cayenne pepper, 2 teaspoons dried minced onion and about 1 tablespoon grated parmesan cheese The result was a very generous batch of sauce with just a hint of spiciness.
