Baked Parmesan Tilapia

Grated a little extra parm on top before serving. Really good recipe and my husband loved it, too!

    Baked Parmesan Tilapia, We eat a lot of tilapia. This is one of out favorite ways to eat it., used Panko Japanese-style bread crumbs and a FULL CUP of freshly grated Parmesan cheese. 4 large fillets fit perfectly in a 13 x 9 1/2 baking dish. 22 minutes max. 30 minutes would have dried them out. Grated a little extra parm on top before serving. Really good recipe and my husband loved it, too!, used 1/2 c buttermilk with 2 TBSP Dijon and a few dashes of hot sauce in place of the wet mixture. Delicious.

    Spray Baking Pans With Nonstick Cooking Spray.

    Preheat Oven to 400.

    Place Beaten Eggs in a Shallow Dish. Stir in Mayo and Lemon Juice. Stir Until Well-Combined.

    in a Separate Shallow Dish, Stir Together Breadcrumbs, Parmesan Cheese, and the Herbs/Spices. Mix Well.

    Dip Each Fillet Into the Egg/Mayo/Lemon Juice Mixture Coat Both Sides. Let Excess Drip Off, Then Dip Into Breadcrumb/Cheese Mixture to Coat Both Sides.

    Place Coated Fillets in Prepared Baking Pans. Bake, Uncovered at 400 For 20-30 Minutes or Until Fish Is White and Flaky Inside.
