    Parbake Pie Crust in 9 Inch Pie Pan. While Baking, Combine, Eggs,1/2&1/2,Ricotta, Herbs and Seasonings. Wisk Very Well. Once Crust Is Done, Add a Layer of Cheese,Then Spinach, Then Mushrooms, Then Remainder of Cheese. Pour Egg Mixture Over,and Sprinkle With Parm. Cheese. Place Pie Pan on a Cookie Sheet and Place on Middle Rack of Preheated 350 Oven. While on Rack, Pour Hot Water on to Cookie Sheet, Around Pie Plate.almost to Top of Cookie Sheet. Carefully Close Oven and Bake Till Set, About 35-40 Minutes. Do not Over Bake! a Little Jiggle Is Ok, as It Will Set While Cooling. Mungia Tutti!
