2 tablespoons dark brown sugar
1 tablespoon minced fresh ginger
1 tablespoon sambal oelek (chile paste with garlic)
1 tablespoon low sodium soy sauce
2 teaspoons coriander seeds
2 teaspoons canola oil
1 teaspoon fish sauce
1/2 teaspoon turmeric
1/2 teaspoon black peppercorns
1 dash of freshly ground nutmeg
4 garlic cloves
2 whole cloves
1 1/2 lbs chicken breast tenders

    Great tasting chicken sate! I made these last night for our New Years Eve party and they were a huge hit! used 4 large chicken breasts sliced fairly thin and tripled the marinade recipe. Due to availability in my pantry, used small sweet onions for the shallots, light brown sugar, and left out the fish sauce and cloves. I let the chicken marinate for about 5 hours, then cooked the skewers on the BBQ. The chicken really soaked up the sweet/spicy flavors! Before our guests had even arrived, my DH came into the kitchen with a skewer raving about how good they were. I just bought bottled peanut sauce, but my DH said it was so good without it, so I didn't even put it out. Next time I'll make them for dinner and use the peanute sauce, because that sounds so good to me! Thanks for a fab recipe!

    Chicken Sate with Peanut Sauce, We prefer the chicken breasts whole, with the sauce accompanying, but you can cut it into chunks and skewer it if you prefer The sauce is SO good that I eat the leftovers with a spoon! (Also very good on toasted English muffins ), I made the chicken but didn’t make the peanut sauce, as we don’t care for it, but the chicken was excellent and we loved it!, Very good, i would definitely make this again Heard no complaints at the table

    Preheat Broiler.

    to Prepare Sate, Place First 13 Ingredients in a Food Processor and Process Until Smooth. Place Shallot Mixture and Chicken in a Large Zip-Top Plastic Bag. Seal and Marinate in Refrigerator 10 Minutes.

    to Prepare Peanut Sauce, Combine Peanut Butter With Next 6 Ingredients (through Sriracha) in a Medium Bowl; Stir Well With a Whisk. (i Found It Was Much Easier to Mix Together After I Microwaved For About 45 Seconds to Soften the Peanut Butter a Little).

    Remove Chicken from Bag and Discard Marinade. Thread Chicken on 8 (12-Inch) Wooden Skewers. Place Skewers on the Rack of a Broiler or Roasting Pan Coated With Cooking Spray. Broil 12 Minutes or Until Done, Turning Once or Twice as Needed.
