    II found this recipe in an old, Louisiana Jr. League cookbook about 35 years ago and love it dearly! So easy with today's ready cooked chickens or even containers of cut up white meat (at Kroger.) I make it with a cup+ of lightly cooked asparagus, cut in pieces,(instead of green beans) a can of artichoke hearts, cut, and no pimentos. Light mayo obviously. It's an elevated version for a dinner party or... I love the water chestnuts so much I'll use a can and 1/2. Excellent last minute casserole when a dinner unexpectedly falls on you. When I was a F.A. for Delta I gobbled it up cold on the plane the next day. YUM.

    Chicken Spectacular, When I had a baby 12 years ago a lady at my church brought me this dish It was so good I asked for the recipe I’ve seen the recipe in The Cotton Country Collection and several other cookbook but have not seen it on Recipezaar I like to cook the rice in the water saved from cooking the chicken I think it adds to the flavor of the dish , II found this recipe in an old, Louisiana Jr League cookbook about 35 years ago and love it dearly!
