Cornmeal Blender Waffles

    Best waffles ever! I have never had such fluffy waffles, and without buttermilk too! Perfectly crisp on the outside, deliciously fluffy on the inside. Amazing texture and flavor. I loved the slight crunch from the cornmeal. I don't have a blender and just mixed everything by hand, with a whisk. Worked just fine. I doubled the recipe and added 1/3 cup sugar, a good splash of vanilla extract, and some almond extract. We always eat our waffles plain, without toppings, so these are things I add to every waffle recipe.

    Preheat Your Waffle Maker and Set Oven Temp To"warm" (so You Can Keep the Waffles Warm While the Others Are Cooking).

    Place All Ingredients in a Blender Container.

    Cover and Process at Med-High Speed Until Dry Ingredients Are Moistened.

    Do not Overblend.

    Pour 1/2 Cup (125 Ml) Batter Over Grids.

    Close Waffle Maker Gently and Bake Until Steam No Longer Escapes (about 3-5 Min).

    Remove Waffle With a Fork and Place on Baking Sheet to Keep Warm in the Oven.
