    Heat Half the Vegetable Oil Over High Heat in a Wok or Cast Iron Skillet.

    Add Chicken and Cook Until Lightly Browned, About One Minute.

    Remove Chicken and Add the Remaining Oil. Add the Peppers and Zucchini and Cook Until Softened and Browned, About Five Minutes.
