Fig Jam,It has been years since I have done any canning. I have made this recipe over and over. It actually won me a couple of ribbons in State Fairs.,Anybod ever use white figs for this tecope? They are bigger than red figs and have thicker skins? Ill let you all know. Had many white figs this year!,Got some figs from my tree in my yard – only about 2 cups. Reduced the honey to 1 cup and about 1 1/2 tbsp of lemon juice. The candy thermometer trick at 220 degrees worked great. Only got 3 small jars, but as soon as I get more figs, I’m making more!!!!! So delish.
