2 1/2 cups low-fat chicken broth
1 (14 ounce) can pineapple chunks in juice, undrained
1 1/2 cups uncooked long grain white rice
3/4 cup carrot, finely chopped
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/3 cup ketchup
2 tablespoons brown sugar
2 tablespoons soy sauce
2 tablespoons vinegar
3/4 cup chopped green onion (optional)

This is delicious and very easy to make The only thing I did different was to use the whole green and red pepper I don’t know what else to tell you except that you need to give this recipe a try Made for * Spring PAC 2009* game, This was good but seemed to be missing something or maybe there was too much vinegar for me? used a 20 oz can of pineapple and no peppers (personal preference) It was very quick and easy I will make again and play with the ingredients a bit

    Spray a Large Saucepan or Skillet With Nonstick Spray.

    Add Chicken Cubes.

    Cook Over Medium-High Heat Until Chicken Is No Longer Pink Inside.

    Add Remaining Ingredients (except Green Onions, If Using).

    Cover and Simmer, Stirring Occasionally, For 25 Minutes, or Until Rice Is Tender.
