Skinny Mashed Potatoes,I have a meat and potatoes guy who could live on potatoes and gravy. This is how I make it healthier and lower in fat!,I finished the potatoes with a bit of fresh chives at the end for a bit of color and flavor!,Honestly, I didn’t even miss the butter or milk. These were some of the best mashed potatoes I’ve ever had. Based on the last reviewer, I added the broth a bit at a time, until I got to the right consistency that I liked. This would be great with roasted garlic next time!
