1/2 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup grated cheddar cheese
sour cream optional

Southwest Quinoa and Roasted Vegetable Medley Recipe

    This is sooooo good and quite easy! I doubled the recipe and it fit in a 9x13 casserole dish just fine. used habanero ro-tel tomatoes and a little extra jalapeos and it turned out a nice spice level for me (we like more spicy things). I rinsed and drained the black beans, not sure if I was supposed to do that or not, but the consistency ended up good.

I doubled the recipe and it fit in a 9×13 casserole dish just fine. used habanero ro-tel tomatoes and a little extra jalapeos and it turned out a nice spice level for me (we like more spicy things). Think its still good a week later?

    Preheat Oven to 400.

    Combine All Ingredients Except Cheese and Sour Cream in a 2 Quart Casserole.

    Cover With Foil and Bake For 30 Minutes.

    Remove and Stir.

    Bake For Another 20 Minutes or Until All Liquid Has Been Absorbed and Quinoa Is Tender.

    Cover With Cheese and Broil Till Cheese Is Melted (usually Around 1 or 2 Minutes).

    Serve With Sour Cream.
