Adjust Servings:
2 1/4 cups quick-cooking oatmeal, uncooked (2 3/4 cups old-fashioned)
3/4 cup firmly packed brown sugar
3/4 cup raisins or 3/4 cup dried cranberries
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 1/3 cups skim milk
1/2 cup egg substitute or 2 -3 eggs, beaten
1 tablespoon vegetable oil
1 tablespoon vanilla

    This was great, like the softness, yet it cooks up. Mine was done in an hour in a 10 by 7 pan I would say. or 9 by 9 pan, a bit bigger then what it calls for here. I did change the fruit to 1 cup frozen rhubarb and squeezed juice of one orange then made up for the rest of liquid called for in water. used egg whites, no oil, and monk fruit sugar replacement. ( I am cooking for someone with diabetes so needed to decrease carbs and sugar) used 1 tsp vanilla and 1/2 orange extract. Wonderful! I will make this with other fruit combos. I think it is a favorite baked oatmeal recipe. May add some ground flax -1 tab next time.

    Preheat Oven to 350f.

    in a Large Bowl, Combine Oats, Brown Sugar, Raisins, Cinnamon and Salt, Mix Well.

    in Another Bowl, Combine Milk, Egg Substitute, Oil and Vanilla and Mix Well.

    Add the Dry and Wet Ingredients Together and Mix Well.

    Pour Into an 8"x8" Greased Baking Dish and Bake For 55-60 Minutes or Until Centre Is Set and Firm to the Touch.

    Remove from Oven and Cool Slightly.
