2 1/2 cups all purpose flour
1/4 cup yellow cornmeal
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon red pepper
1/2 cup parmesan cheese grated
1/3 cup dry buttermilk
1 tablespoon dried onion flakes green onion if you can find it
1 1/2 - 2 teaspoons dried red pepper flakes
2 eggs
1 1/2 cups water
1/4 cup vegetable oil

    Nearly 15 years ago, I gave this recipe as gifts to many co-workers along with a bean soup in a jar -- layers of 10 different dried beans, peas and lentils. I called it New Years Day bean soup to be made with V-8 juice on New Year's Day! I loved giving this muffin mix and keeping some for myself. A great gift and a TERRIFIC muffin. Not only is it good in a jar, but it's fun to do in a non-zip plastic bag and put in a largish chinese box -- like the kind you get for chinese takeout. Enjoy! You'll love it. And the buttermilk powder comes in handy for other recipes too!

    Combine All Ingredients and Mix Them Together Well.

    Pour Into an Airtight Container, Like a Quart Mason Jar and Store in a Cool, Dry Place.

    *directions For Recipe Gift Card:* You Can Copy and Paste This but You Will Have to Adjust the Spacing Etc -- Add 2 Eggs, 1 1/2 Cups Water, 1/4 Cup Vegetable Oil. Place Muffin Mix in a Large Bowl and Make a Well in Center of Mixture. Combine Eggs, Water and Oil, Add to Dry Ingredients, Stirring Just Until Moistened. Spoon Into Greased Muffin Pans, Filling 3/4 Full. Bake at 400 Degrees For 20 Minutes. Remove from Pan Immediately. Yield: 2 Dozen.
