    I made this for the dinner the other night as it used a lot of leftovers I had in the fridge. I did it in the oven and loved the fact that it was practically a no mess dinner. The chicken was lovely & moist and packed with flavour, hubby & I both thoroughly enjoyed it!

    Chicken Pizza Packets, From TOH-Quick Cooking. A fast, easy, and yummy grilled dinner., I made this for the dinner the other night as it used a lot of leftovers I had in the fridge. I did it in the oven and loved the fact that it was practically a no mess dinner. The chicken was lovely & moist and packed with flavour, hubby & I both thoroughly enjoyed it!, This is a very tasty recipe. And quick too! I baked it in the oven at 350 for about 35-40 minutes instead of grilling. The only thing that I would add is when it’s being served, add some tomato sauce of some sort on top which was my husbands idea, but I agree! because it turned out a little bit dry. Can’t wait to try it again with that addition. Thanks!

    In a Big Mixing Bowl, Add the Chicken Pieces, Olive Oil, Zucchini, Pepperoni, Green Pepper, Onion, Garlic, Oregano, Basil, and Salt and Pepper; Toss to Combine.

    Coat 4 12-Inch Square Pieces of Heavy Duty Aluminum Foil With Non-Stick Cooking Spray.

    Place One-Fourth of the Chicken Mixture Onto the Center of Each Piece of Foil.

    Fold Foil Around Chicken Mixture and Seal Tightly.

    Grill, Covered, Over Medium-Hot Coals For 15-20-25 Minutes or Until Chicken Juices Run Clear.

    Open Each Packet Carefully and Sprinkle With Tomatoes and Cheeses; Seal Loosely.
