    Good basic recipe, and a great way to use up a gigantor zucchini I found lurking in my garden. I upped the nutritionals by subbing whole wheat pastry flour for the all-purpose and a 1/4 cup of egg substitute per regular egg. I also added a healthy pinch of Penzey's Turkish seasoning. I served these little yummies with a spicy dip of reduced fat sour cream, nonfat greek yogurt and a few squirts of sriracha sauce. We could not stop eating them.

    Stir the Egg in With the Zucchini and Onion, Before Adding the Salt and Flour.

    Heat the Oil in a Frying Pan and Spoon Tablespoons of the Batter in, Spreading Into Think Patties and Cooking For a Couple of Minutes on Either Side Until Golden.

    Place on Kitchen Paper to Drain Excess Oil and Whilst Making Another Batch.
