1 (10 ounce) can rotel tomatoes & chilies (optional,drained, it can it super spicy)

    Crock Pot Shredded Chipotle Chicken, This is a recipe that’s very easy and simple I think it’s some of the most flavorful chicken (I’ve made) with no salt added! I love these as tacos with romaine lettuce, pico de gallo, shredded cheesed and some sour cream It get’s really spicy with the added Ro*Tel in there so I omit it unless I’m wanting a lot of heat I added the beans and corn because it’s acts like a corn salsa/refried beans, I suppose It’s great to throw together before you run off to work It feeds me for a week but I cook for one , had a whole chicken that I needed to cook so put it in the crock pot ran my Chipotle’s and lime juice garlic salt and fresh ground black pepper into the food processor covered the old bird with that mixture put about 2 cups of water in the bottom started it on high switch it to low later once it’s falling apart I’ll pick it add to black beans Rotel and corn, Thank you for this recipe – So good!! Added some Italian herbs and a touch of chili powder (we like it hot) and let it cook for a good 8 hours – turned out beautiful!! Had it with rice, as tacos and now as a salad with lettuce and guac – delicious every time!! I would recommend adding the veggies
