Pea and Lettuce Salad, This is a beautiful fresh spring salad using simple everyday ingredients use this for bring a salad events when I know everyone else will bring potato salad, pasta salad or coleslaw This one presents very nicely among the white of other salads and the bowl is always empty , YUM!!! I found this fantastic! What a great change from traditional heavy mayo salads used frozen peas and 2 romaine hearts shredded and the salad has held up (dressed) for two days and holding Peas and lettuce still crunchy!! Thank you for posting , Great salad so very easy and so very quick and so very good!!! I made with romaine and iceberg lettuce, I also used fresh peas I followed the recipe exactly I made this salad for dinner and DD and DH didnt try it, one hates peas the other hates lettuce, but I thought that it tasted great I cling wrapped it and put it in the frige for the next day DS and his girlfriend came home and all but demolished it They loved it, so then DD decided to give it a taste and liked it peas and all !!!! The salad even had stayed crisp for the next day, and being fresh peas they didnt loose their colour of go soft I was amazed !!! DS gave the thumbs up to this salad, and has asked I make it in future Thanks darang61 great quick easy and tasty recipe, which I will be making again and again with summer coming on
