1 lb chickpea flour (about 450 g)
2 spring onions, finely chopped
1 teaspoon broken cumin seed (or ajwainseeds)
1/2 bunch finely chopped fresh coriander
1/2 teaspoon chili powder (or 1 finely chopped green chilli)
1 teaspoon salt and 1/2 tsp black pepper
1 pinch asafoetida powder
1 1/4 pints water (about 700 ml)

    These were worth the extra work. I had a difficult time cooking these lovely pancakes. I made them smaller and was gentler with them, that worked a little better for me. My pancakes were not thin but they were tasty and a little dry. They didn't turn out looking pretty but they sure tasted good. I omitted the asafetida powder, never heard of it before and I couldn't find it in the stores around here, we didn't miss it. I did not have the scallions so I added in some fresh chives. Two small green chilies were chopped for 1/2 a recipe. Some Gram Marsala was added to the batter. My first 2 were a disaster but after I got the hang of it they are very easy to make. I think mine were a little thicker than intended but with practice I should do much better. I do plan to have practice. Made for Aussie Swap.

    Mix Ingredients, Then Add Water to Make a Batter.

    Leave to Rest For an Hour.

    Heat Flat Griddle or Frying Pan; Spread a Little Oil on It.

    Pour in a Little of the Mix and Spread It Out With a Wooden Spatula So It Thinly Covers the Pan.

    Cook For About a Minute, Then Turn Over.

    Serve With Yogurt, Pickles or Chutneys.

    Note: to the Mixture You Can Add Grated Carrots, Garam Masala Other Other Spieces.
