    Excellent! The crumb is tight, moist, light and tender. It sliced beautifully. used melted butter and added a pinch of salt. I also sprinkled the bottom of the pan with finely chopped toasted almonds before adding the batter, and drizzled the top of the baked cake with an almond flavored glaze. Even though this is a tender cake it released from the pan with no problem.

    Scandinavian Almond Bread,Great recipe from my mom — 100% Norwegian — very easy, very moist, delicious bread (cake)!,Excellent! The crumb is tight, moist, light and tender. It sliced beautifully. used melted butter and added a pinch of salt. I also sprinkled the bottom of the pan with finely chopped toasted almonds before adding the batter, and drizzled the top of the baked cake with an almond flavored glaze. Even though this is a tender cake it released from the pan with no problem.,We call this Scandinavian Almond Cake, not bread. Definitely cake like. I also changed up the recipe to make it gluten and dairy free. Absolutely amazing! When I make it, it doesn’t last even a few hours. Everyone munches on it even when it’s not dessert time, lol. I also use vanilla extract in the recipe and powdered sugar gets sprinkled on top after it has completely cooled.
