Scrumpchies, Browned ground beef is simmered in tomato sauce and spices The meat mixture is spooned over toasted English muffins topped with cheese then heated in the oven until cheese is melted NO Substitutions or it will not taste as it should , This is pretty good stuff Despite the cute name, this is basically sloppy joes on an english muffin and topped with a slice of melted cheese The meat/sauce mixture is kind of mildly flavored, but still good I made this pretty much as written, with about 1 5 lbs of 90/10 ground sirloin, half a medium-sized white onion, and a can of store-brand tomato sauce (I couldn’t find Hunt’s in a 15 oz can) You don’t really need to bake them in a 350-degree oven The cheese melts so quickly that I just stuck the scrumpchies in the oven as it was heating up, around 200 degrees, and took them out less than 2 minutes later I had 4 at a time, for 3 consecutive dinners, and I still enjoyed them (I cooked the meat mixture in advance and just assembled the final things each night ) Thanks, and I just might make these again soon!
