1 lb fresh mushrooms, coarsely chopped
1 onion, finely chopped
oil (for frying)
salt and pepper
fresh cilantro, finely chopped,for garnish (optional)

    I haven't tried this yet, but I just want to throw out a suggestion. Try putting this over some prepared Orzo..and garnishing with sliced toasted almonds. I had an amazing moroccan chicken recipe that was served that way...also, there was cumin in the recipe. I hope this helps anyone wanting to doll this up a bit.

    Cut the Chicken Breast Into Largish Bite-Sized Portions.

    Mix the Flour With the Cinnamon, Confectioner's Sugar, Ginger, Salt and Pepper to Taste.

    Dredge the Chicken Pieces in the Flour Mixture.

    Fry in Shallow Oil Until Browned and Cooked Through, Turning Once.

    Keep Warm in a Low Oven.

    Saute the Chile Peppers, Mushrooms and Onion in Oil Until Softened and Golden.
