    Perfect Southern Fried Chicken, This is an outstanding recipe When I found this I decided I didn’t need to look for the perfect fried chicken recipe any more – I already had it , How do you get 4 breasts out of 1 chicken?, I was going to try this recipe but then got a good look at the sodium content People with any kind of high blood pressure or heart problems should definitely steer clear of this one the salt in the brine is way out of line for them! Better to just wash your chicken piece, give a light breading with flour and any fresh herbs of your choice, and definitely no salt! Bake them on a a parchment paper covered sheet pan that has some olive oil and cover the pan with foil for first 30 minutes at 350 degree oven then remove the foil and continue to bake turning once until juice run clear and chicken is done thru (approx another 15 minutes) Your heart will thank you!

    Soak Chicken in Water and Salt at Least 2 Hours in the Refrigerator.

    Mix Buttermilk, Eggs and Season All and Dip Chicken Pieces in This Mixture.

    Drop Two Pieces of Dipped Chicken in the Bag at One Time.

    Place on Wire Rack to Rest.

    (i Place Wax Paper Under the Rack to Catch Any Flour That Falls Off.) Heat a Shallow Layer of Oil or Shortening to 360 F in a Jumbo Chicken Skillet (cast Iron Is Great For This Job) or an Electric Skillet.
